Follow the manual method in http://support.microsoft.com/kb/2528748 but as you are using Office 2007, you will have to change the command to:
reg add HKCU\Software\Microsoft\Office\12.0\Word\Options /v NoReReg /t REG_DWORD /d 1

Thank you, Doug.....my problem is resolved. I wasn't sure at first, as the first time I opened Excel and made an entry, the configuration box opened when I clicked 'Save'. It ran, then closed. Since then the Office apps have been working fine and the 'Recently Used' on the Office Button, no longer disappear.

For Doug....well, I thought the problem was resolved, but it's still there...just reacts a little differently now. Example...open Excel, installer runs first, then file opens...make my entries and click close. (on auto save). Now I get 'Configuration processing.... After that runs, box opens that asks if I want to save changes...click save and it closes. After that, Office files run OK, until next day when I turn on my PC again and try to open an Office file. Also, still losing 'Recent Documents' list each time. Any other suggestion? Tks

The noReReg key is normally used when you have more than one version of Office installed, but it can be used for a single version.
I believe your problem is a related one. Sometimes Windows get a little "stupid" and does not grant itself all of the required "Windows Access Rights" to save the configuration changes made each time.
There is a simple fix for this issue. After starting your computer normally, use "Run As Admin" to start any of the Office applications. The Configuration process will run one more time, but this time, the additional access rights will mean that the changes are saved when Windows closes normally. So after the configuration process completes, shut down the application normally and restart Windows normally (do NOT simply use the Power button!). Start Windows normally, then try starting any Office app normally (not using "Run As Admin). It should work now without the configuration process.
(Win 10 Run As should be similar to Win 8 ... )
Win 8 - Right click on desktop shortcut, select "run As Admin" from dropdown. On Win8 Start Screen, right click on the "tile" and select "Run As Admin" from the task bar that pops up on bottom of screen

Please note that I had already uninstalled and reinstalled MS Office Enterprise 2007, including deleting all folder references to Office, prior to making the reg entry from the first suggestion. Don't know if that helps to steer this in a different direction.

I managed to find a "Run as Administrator" checkbox from my Excel shortcut on the taskbar and followed the instructions you gave. I am no longer getting the 'installer' and 'configuration' processes running when I open any office app.....BUT, if it is Excel that I am opening, the User Account Control dialogue box opens & asks, "Do you want to allow this app to make changes to your PC?" I click 'Yes' and Excel then opens. Weird...........!!!!

User Account Control is a security feature. You shouldn't see the prompt the next time you start Office programs normally (that is, without running them as Administrator).

Just sat down at the computer tonight....you're right UAC didn't come up again when I opened Excel....BUT, I'm pretty much back where I started.
1. Open Excel...Window installer processes.
2.Excel open....make my entries and click to close file.
3. Configuration process opens on top of file and does its thing, and then closes.
4. Dialogue box to "save" file opens. Click 'Yes' and file closes.
5. My 'Recent Documents' list is empty again.
6. From this point, when I open Excel, I'm back to the UAC dialogue box again....click 'Yes" and Excel opens.
Note that other Office apps open OK....no UAC box opens. And this time, my computer was not shut down after I thought things were fixed with 'Rohn007's' suggestion. I was just away from it for about 6 hours.
(I'm at a loss here.......:(

Sounds like you are now trying to run Excel in "Run as Admin" mode all of the time. That would be why you are getting the UAC prompt. You don't need to. You only needed to run it in that mode once.
Right click again on the Excel shortcut and see if you have a "check" that has turned on "Run As Admin" permanently. If the Run as Admin option is "checked", then uncheck it.
